Guacamole and Pico de Gallo

Serves 12

5 each organic avocados, halved and peeled
1/2 each organic red onion, minced
1 1/2 each organic plum tomato, diced.
1 1/2 organic-jalapeno, minced
1/2 cup organic cilantro, chopped
1/2 cup Parmesan, process in blender
2 tablespoons lime juice
Kosher or sea salt to taste
White pepper to taste

In bowl, mash avocado into paste. Add remaining ingredients.
Mix Well, taste for flavor.

Pico de Gallo

Serves 10

4 organic tomatoes, seeded, diced small
1 organic red onion, peeled and diced small
1 organic jalapeno, seeded and minced
2 tablespoons Rice Wine Vinegar
1/2 cup chopped cilantro
Kosher salt to taste
White pepper to taste
1 1/2 teaspoons olive oil

Mix all ingredients in bowl and chill.
